Germinated Brown Rice Chocolate Pudding
Ingredients (serves 4-6)
1/2 cup sugar
2 tablespoons cornstarch
Pinch of salt
1 1/2 cups milk
1/2 cup cream
1 teaspoon vanilla extract
4 ounces semisweet chocolate, melted
1 1/2 cups DHC Germinated Brown Rice, cooked
In a heavy-bottomed saucepan, whisk together sugar, cornstarch and salt, followed by milk and cream. Heat over medium heat, stirring constantly until mixture thickens. Remove from heat.
In a small bowl, beat eggs, adding in about 1/4 cup of the hot mixture. Add this back to the saucepan, whisking together over medium heat. Bring mixture to a gentle boil, stirring constantly until thickened. Remove from heat and pour through a strainer into a bowl, then stir in vanilla, melted chocolate and cooked brown rice. Serve warm or chilled.
Top each serving with your favorite fresh berries for a flavorful garnish that adds a lovely touch of color.
