Vegetarian Tacos
with DHC Madras Lentils
Ingredients (serves 4)
8 taco shells or flour tortillas
2 packages DHC Madras Lentils
1 1⁄2 cups cheddar or Monterey Jack cheese, shredded
1 cup sour cream
1 1⁄2 cups lettuce, shredded
2 tomatoes, diced
1/2 white onion, diced (optional)
1 jalapeño, diced (optional)
Directions
Place taco shells or flour tortillas on a baking sheet in unheated oven. Turn oven to 350º (approximately 5 minutes).
In a small skillet, warm Madras Lentils over medium heat, stirring occasionally, for about 2 minutes. Remove from heat and pour directly into a strainer or colander, eliminating excess liquid. Add to taco shells or tortillas and top with cheese, sour cream, lettuce and tomatoes.
