GreeNoodle Salad

featuring DHC GreeNoodle Plain

INGREDIENTS (serves 2-3)

DRESSING
  • 1/4 cup reduced-sodium soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • Lime slices for garnish (optional)
SALAD
  • 1 (3.5 oz.) package of GreeNoodle Plain
  • 1/2 cup Romaine lettuce, shredded
  • 1/4 cup cucumber, diced
  • 1/4 cup tomato, diced
  • 1/4 cup carrot, chopped
  • 2 tablespoons cilantro, diced
  • 1/4 cup peanuts or almonds

DIRECTIONS

Mix together the dressing ingredients in a salad bowl and set aside. Cook the GreeNoodle package as directed, drain and cool under cold running water. Place the noodles and vegetables in the salad bowl with the dressing, toss and serve.
